Roasted Salmon

375 dg. for 23 minutes.

Brown Sugar & Dijon Recipe:

1/4 cup brown sugar
1/4 cup honey
4 tbsp. Dijon
2 tbsp. Lemon Juice (or the juice from 1 lemon)
1 Tbsp. flour
1/2 tsp. balsamic
1 cooking tsp. butter
1 1/2 tsp. Siracha

Salt and Pepper in the middle of the salmon steaks, salt and olive oil on the bottom pepper well on top.
6 cloves of garlic put around the salmon

Pan-Roasted Duck Breast

Serve with separated puree of roasted carrot and cauliflower. 400 for 30 mins.

Preheat a baking sheet in the oven.

Duck breast, slits on the skin side.
Salt.
Pepper.

Thyme.
Parsley.
Small dash of Chevril.

Add the breast on the pan cold, and then turn the dial to a med. to high heat. The duck cooks in its own fat.

3 mins on skin side and then flip.
3 mins, again. Butter.

Take the baking sheet out of the oven.
Place the duck breasts, skin side down. Add red wine.
Glaze with honey.

400 dg. 6 mins.

When ready, cover with foil for 10 mins, letting the meat rest.

After, salt, slice and serve on the puree.

The Lesser Scrambled Eggs

For the professional in a pinch:

2 Egg *Whites* (the yolk does not work in the microwave)
1 tsp. Butter
1 tsp. Milk

Mix with a fork in a bowl

Microwave 1:30

Take out

1 tsp. Milk Again

Microwave 1:30

Salt
Pepper
Chives

Done.

Ceviche

Servings: 4

1 lb. of firm, red snapper or swordfish
1/4 Cup Lime Juice
1/4 Cup Lemon Juice
Siracha, lightly applied

1/2 Red Onion, finely diced
1/2 Cup, diced Tomatoes (seeded)

1 Avacado
Cilantro, chopped as a garnish
Salt

Put in a container and leave for (4) hours. The acid in the citrus will cook the fish.

Just before serving:

3-4 Bananas, sliced and fried in olive oil med. to high heat 1 min.

Consider: Tortilla Chips

Tomato & Bread

Amazingly simple and amazingly delicious.

2 slices of a French Loaf, toasted
Olive Oil, spread on one side of each slice
Salt
Pepper
Tomato, fresh and sliced

The tomato, which is usually a side becomes the star of the dish. The olive oil, salt and pepper all help focus on the main ingredient. When you consider that pasta and pizza are favorites, then the dish makes total sense

Z’s Margarita

Based on this recipe:

Servings: 1

1 1/2 Shots Lime Juice (about 3 squeezed limes)
2 Shots Water
2 1/2 Shots Tequila (The kind of tequila is essential. Sauza Commemorativo is best)
1 Shot Triple Sec (Cointreau is considered best according to margarita snobs)
1 Shot OJ

2 tsp. White Sugar

Notes:

This drink will get you or your guests absolutely knackered. One should *NOT*
drive after imbibing these.

1 serving = 3 limes. So, you will need a *TON* of limes.

The shots above should be thought of in terms of units. 1 shot = 2 Tbsp.

Fresh = Best.

Shaved Zucchini Pasta

3 Zucchinis, shaved and placed in a large bowl

1 Tbsp. Butter (melted)
1 Tbsp. Olive Oil
1 Tbsp. White Wine
1 1/2 Tbsp. Lemon

1/4 Cup Pine Nuts
1/4 Cup Garbanzo Beans

Chopped Basil
Salt
Pepper
Parmesan (shaved)
